Brian hadn’t eaten all of our farm share that he picked up while I was gone last week, so I enjoyed a yummy lunch with some of our goodies today (I took the day off to recuperate from the l o n g work trip). I stuffed a fresh pita with some sauteed zucchini, a sprinkle of mozzarella and a bit of pesto. Perfection.
On the side I had a dish of creamy cole slaw. Brian prepared it yesterday with cabbage, radish and green onions, all from our share, and some mayonnaise and sugar. If we’d had eggs this week he claims he’s have made the mayonnaise homemade. We’ll try that next time!
